Sync

Please forgive this simple question from 100% non techy.
I have a Touch HD and my home PC is now running Vista.
My Touch automatically connects to Windows Mobile Device Centre and also to Sync Center from the Control Panel. My question is, where is everything on my phone synced to as I can't see anything in Outlook which I used to have synced on my previous version of Windows...thansk for any help/advice.
