Changing 'from' email account at compose time

Hiya,

Can anybody please please please tell me how to change the account from which an email is sent at the time of composing it. i.e. if I recieve an email via my Outlook E-mail account, open it whilst on the move and then reply to it using another pop 3 account?

I am running WM5 on an Orange M3100.

Any help much appreciated!
