Does anyone know any software which can change the symbol of underground stations to the London Underground logo which is compatible with TomTom 500?

If you mean the inbuilt POI's, rather than added OV2/BMP files, then this is not possible as it's hard coded into the software.

If it's for self made, or downloaded POI's, then make the image a 16x16 BMP file, and name this the same as the corresponding OV2 file. The BMP is the logo, and the OV2 is the POI's.
